Shrikhand is another Indian dessert. It's not Bengali unlike many of the Indian recipes on this website, but originally hails from Maharashtra or Gujarat, depending on who you ask. Here's a simple recipe.
2 cups plain whole Greek yogurt
2 cardamoms, ground (~half a teaspoon)
a quarter teaspoon saffron threads (divide evenly into two halves)
3 TBSP sugar
In a cheesecloth inside a bowl or some other similar setup, let the yogurt drain over night. Discard the drained liquid afterwards and remove the cheesecloth.
Grind one half of the saffron to a powder. Crush or grind the cardamom pods. You can remove the seeds if you feel like it. Add the spices to the yogurt, add sugar1, then mix well.
Garnish with the remaining saffron threads on top. Place in refrigerator for at least two hours before serving.
